Bacon Tomato Pasta

1/2 lb bacon; cut into 1″ lengths

 1 C Finely chopped yellow onion

 16-oz can of diced tomatoes

  1 C Packed chopped fresh basil

  1/2 C Heavy whipping cream

  Fresh basil sprigs; for garnish

  Freshly grated Parmesan-cheese; for passing (preferably Parmigiano-Reggiano)

Sauté bacon pieces over medium-low heat and cook until done but not crisp.

Add the chopped onion and cook, stirring frequently, until soft and lightly golden, about 5 minutes.

Add chopped tomatoes and chopped basil.

Simmer for about 30 minutes. (I’m always in a hurry so I don’t have time to cook it that long.)

Serve over penne.
